For the "Litter Picker" achievement you need to recycle 100 items. The most obvious way to start recycling is the cans dotted around the map. The problem there is that these are very limited already and don't respawn. Another method is to trip humans up that are holding a can and then picking it up when they drop it. Still, it's not a very fast method even if you can keep repeating it.
The last way of getting cans to recycle is by running full speed into vending machines. Typically each vending machine will spit out 2 cans for you to recycle. There is, however, a specific vending machine that spits out 8 cans when you hit it.
The vending machine is located near the construction site.
Simply run into the red vending machine at full speed and the cans should fall out. This will also trigger the "Who Needs Cash?" achievement! The recycling bin is next to the vending machines on the right side.
Once you've recycled all the cans, save the game and exit to the main menu. Reload the save, hit the vending machine again and watch as the cans fall out again. Keep repeating this until you have recycled 100 times for the achievement.
